2 tbsp oil

500g beef mince

1 onion, diced

⅓ cup water

½ cup mozzarella, shredded

Step 1
Preheat oven to 180°C.

Step 2
Heat oil in a pan over medium-high heat. Add diced onions and cook until they are translucent. Add beef mince. Once cooked halfway, add Mission Taco Seasoning, and water and cook for 10 minutes.

Heat up 6 Mission Street Tacos in the microwave, as per packet direction. Cut tacos into even quarters using a pizza cutter.

Spray a 12-cup muffin tin with olive oil. Add 2 taco quarters into each muffin cup, covering the entire insert.

Assemble taco cups by adding 2-3 tbsp of the cooked beef mince and a sprinkle of shredded mozzarella into each muffin cup.

Bake for 8 - 10 minutes until the cheese has melted. Let it cool for a few minutes (allowing the taco cups to set in shape) before transferring onto a serving platter.

Top each taco cup with diced tomatoes, mashed avocado, and sour cream. Garnish with sliced jalapeños and a pinch of coriander.
