Ingredients

1 packet Mission Spinach and Herb Super Soft Wraps

1 tbsp oil

400g baby spinach

1½ cup feta, crumbled

½ cup parmesan, shredded

3 eggs, beaten

1 onion, diced
-
2 tbsp dill, roughly chopped

1 tbsp parsley, roughly chopped

⅓ cup pine nuts, crushed

½ tsp nutmeg
-
¼ tsp salt

¼ tsp pepper

100g butter, melted

Step 1
Preheat oven to 180˚C.

Step 2
Add half the spinach to a pan and cook until wilted, then repeat with remaining spinach.

Place cooked spinach on a paper towel or clean tea towel to wring out excess water and set aside.

Wipe excess water from the pan and heat up oil over medium heat and cook onions until transparent.

Combine spinach and onion in a mixing bowl with eggs, herbs, pine nuts, feta, parmesan, nutmeg, salt, and pepper.

Heat Mission Spinach and Herb Wraps in the microwave according to packet instructions.

Place one wrap on a wooden board, cut in half and brush melted butter over the wrap.

Place 1 tablespoon of spinach filling into one half of the wrap, starting at one end fold the wrap once and then again into itself to create a triangle shape.

Step 9
Brush more butter on the open edge of the triangle and fold to seal the parcel. Fold may need to be held in place for a few seconds to stay in place. Repeat the steps to create the remaining parcels.

Place parcels onto a sheet pan with baking paper and brush with melted butter and place into the oven.
Cook for 10-12 minutes until the edges of the parcels are golden in colour.
