4 Mission Carb Balance Original Wraps, heated

For the filling

4 large portobello mushrooms, sliced
1 large red onion, sliced
1 large red capsicum, sliced
1 bag fresh spinach
500g firm tofu, diced

3 tbsp soy sauce
½ tsp garlic powder
5 tbsp cornstarch or cornflour

For the hummus
¼ cup fresh lemon juice
½ cup tahini paste
3 garlic cloves
¼ cup olive oil
¼ cup cold water
1 tsp salt
¼ tsp pepper
1 tsp ground cumin
1 ½ cups cooked canned chickpeas, rinsed and drained

Step 1
Preheat the oven to 200°C. Slice the mushrooms, red onion and capsicum lengthways. Place veggies on an oven tray lined with baking paper. Sprinkle over some olive oil, salt and pepper then massage in. Place in the oven and roast for 20 minutes, turning veggies halfway through.

Step 2
Drain and press the firm tofu, be sure to get out as much liquid as possible. Pat it dry with a paper towel, then cut into small ½ inch sized cubes.

Place cubed tofu in a bowl and add in the soy sauce, garlic powder and cornstarch. Carefully mix this in making sure to not to break the tofu. Allow to sit for 15 minutes to soak it up.

Spray the dish of the air fryer with cooking spray and bake tofu for 20 minutes at 200°C shaking halfway through or pan fry in a shallow dish of olive oil over medium heat until golden brown and crispy.

Step 5
To prepare the hummus, place the lemon juice, tahini paste, garlic cloves, olive oil and water in a food processor. Blend until creamy. Add in the salt, pepper, cumin and chickpeas, blend again until thick and smooth.

To build the wraps, spread a generous amount of prepared hummus around a heated Mission Carb Balance Wrap. Fill by placing roasted veggies, crispy tofu and a handful of fresh spinach along the edge of the wrap closest to you. Careful not to overfill.

Step 7
Fold both sides of the wrap inwards over the filling, bring the bottom of the wrap up and over the filling. Tuck the bottom edge around the filling, then tuck and roll the wrap closed. Slice in half and enjoy!
