  • 8 Mission Original Super Soft Mini Wraps

     

  • Filling:

  • 250g pork mince

  • 1 tbsp oil

  • 1 clove garlic, minced

    50g vermicelli noodles

    1 cup red cabbage, shredded

    ½ cup carrot, julienned

  • ½ cup spring onion, thinly sliced

  • 1 tbsp coriander, roughly chopped

  • ½ cup water

     

    Sauce:

  • ¼ cup smooth peanut butter

  • 2 tbsp lime juice

  • 2 tbsp soy sauce

  • ¼ tsp garlic powder

  • 1 tbsp crunchy chilli oil

  • 1 tsp honey

    1 tbsp roasted peanuts, garnish

    1 tbsp spring onions, sliced for garnish

Instructions

  • Step 1

    Place vermicelli noodles into a bowl with warm water and cover for 2 minutes, or according to packet directions.

  • Step 2

    Heat pan on medium-high heat. Add oil and brown pork mince for approximately 3 - 4 minutes.

  • Step 3

    Add garlic, cabbage, carrot, spring onion and coriander. Cook for a further 3 - 4 minutes, until pork is cooked, and cabbage has softened. Once cooked transfer into a bowl.

  • Step 4

    Heat 8 Mission Original Super Soft Mini Wraps in the microwave, according to packet directions. Have vermicelli noodles and water ready to start assembling spring rolls.

  • Step 5

    To assemble spring rolls, lay one wrap flat onto a board and add a small amount of vermicelli noodles just below the centre of the wrap. Add a couple of tablespoons of cooked filling below the noodles and brush water onto the surface of the wrap that is visible. This will hold the wrap in place as you roll it.

    To roll, fold the bottom part of the wrap over the filling, then fold in the sides and start firmly rolling to the top of the wrap. Repeat this step to make 8 spring rolls.*

  • Step 6

    Lightly spray the air fryer basket with oil and place the spring rolls inside. Only add 3 - 4 spring rolls at a time if you have a smaller air fryer. Cook for 6 minutes at 200°C, turning rolls halfway.

  • Step 7

    As the spring rolls are cooking, make the spicy peanut sauce by adding all ingredients into a small bowl and combining well. Top sauce with garnishes.**

  • Step 8

    Place cooked spring rolls and spicy peanut sauce onto a serving plate and serve hot.

    * Mission Tip - squeeze as you roll to keep the filling in place and brush the top of the wrap again with water to securely hold the spring roll in place.

    **If the sauce consistency is too thick, add a few tablespoons of water to thin it out.
