4 Mission Spinach & Herb Super Soft Wraps

1/2 cup milk

2 eggs

1/3 cup vegetable oil

2 tsp salt

1/2 tsp pepper

150g feta, crumbled

1 cup fresh herbs, chopped

2 cups spinach

1 tbsp olive oil

3 garlic cloves, peeled and smashed

400g canned dived tomatoes

1/2 tsp dried basil
-
1/2 tsp dried thyme

Instructions

Step 1
Preheat the oven to 180°C and grease a 20cm x 20cm baking dish and line the bottom with baking paper.

In a bowl, whisk milk, eggs, oil, 1 tsp salt and pepper.

In another bowl combine feta and herbs ingredients.

Step 4
Fill a large bowl with water and dip each Mission Spinach & Herb Wrap.

Place one wrap in the baking dish and trim the wrap to fit the dish.

Spread 3 to 4 tbsp feta filling, 2/3 cup spinach and a quarter of the liquid mixture over the wrap, repeat layering.

Cover the top with the last wrap and pour the remaining liquid mixture on top. Cook for about 30-35 minutes, until it turns golden brown.

Meanwhile to make the tomato dipping sauce, heat olive oil in a small saucepan over medium-high heat.

Add garlic and saute until browned, 3 to 4 minutes.

Stir in tomatoes, basil, thyme and remaining salt. Reduce heat to medium and simmer for 10 to 15 minutes.

Cut into square and serve hot with tomato dipping sauce.
