6 Mission Lite Super Soft Wraps

1 butterflied chicken
-
½ cup Peri Peri sauce

¼ red cabbage, finely sliced

1 carrot, grated
-
1 long green chilli, finely sliced
-
1 avocado, sliced
-
3 radishes, finely sliced

Fresh coriander leaves

Yoghurt Sauce:
-
1 cup low fat Greek-style yoghurt
-
Juice of 1 lemon
-
1 tbsp Peri Peri sauce
-
1 tbsp chopped coriander

Step 1
Cover chicken with peri-peri sauce and marinate in fridge for 30 minutes or overnight.

Place chicken on a baking paper lined oven tray and roast in a preheated oven of 200°C for 40-45 minutes, or until the skin is browned and chicken is cooked through. Remove from oven, cover with foil, and allow the meat to rest for 5-10 minutes. Carve slices of the chicken and set aside.

Combine all yoghurt sauce ingredients together in a small bowl and mix well. Set aside.

To serve, place the heated Mission Lite Wraps on a serving plate, place shredded cabbage, carrot and chicken slices, top with avocado, radish, green chilli, and fresh coriander. Drizzle with yoghurt sauce and roll into a cone shape to enclose the filling. Serve hot or cold.
