  • 4 Mission Original Super Soft Wraps

     

  • For the Caesar dressing

    ⅓ cup plain Greek yoghurt

    ⅓ cup mayo

    3 tbsp parmesan cheese

    2 cloves garlic, minced

    1 tbsp lemon juice

    1 tbsp Worcestershire sauce

    2 tsp Dijon mustard

    1 tbsp olive oil

    ½ tsp salt

    ½ tsp pepper

     

  • For the chicken

    2 large chicken breasts, butterflied and cut in half through the middle to make thinner and make 4 pieces

    1 cup flour

    ½ tsp salt

    ½ tsp pepper

    2 eggs

    2 cups panko breadcrumbs

    1 cup grated parmesan cheese

     

  • For the salad

    1 large head romaine lettuce, washed and shredded

    1 cup croutons

    1 cup shredded parmesan

    200g bacon, diced

  • Step 1

    Whisk the dressing ingredients together in a bowl. Taste and adjust to desired taste.

  • Step 2

    Slice each chicken breast in half horizontally (as if butterflying), cutting all the way through to create four thin pieces.

  • Step 3

    Pound each piece to about ¼ inch thickness using a meat mallet or a rolling pin.

  • Step 4

    Set up a breading station with three medium sized bowls. In the first bowl combine the flour, salt and pepper. In the second bowl whisk the eggs, and in the third bowl mix together the panko breadcrumbs and parmesan cheese.

  • Step 5

    Coat a chicken piece in the flour evenly on both sides, then dip into the beaten eggs, ensuring the chicken is fully covered. After the egg mixture, press into the panko- parmesan mixture, coating thoroughly on both sides. Repeat for all pieces.

  • Step 6

    Place all prepared chicken pieces in an air fryer. Lightly spray with oil and cook for 20 minutes at 200°C, flipping halfway through. Cook until crispy and golden.

  • Step 7

    Meanwhile, in a large bowl combine the lettuce, croutons, parmesan and prepared Caesar dressing. Toss well to combine.

  • Step 8

    Once the chicken is cooked, remove from the air fryer and allow it to cool. Place the diced bacon in the air fryer, spray with oil and cook for 5 minutes at 200°C.

  • Step 9

    Slice the chicken cutlets into bite-sized pieces and add them and the cooked bacon to the salad. Toss to combine.

  • Step 10

    Heat wraps for 30 seconds in the microwave.

  • Step 11

    Spoon a generous amount of mixture into the middle of a heated wrap, roll tightly, cut in half, and serve!
