Ingredients

1 packet Mission Original Super Soft Mini Wraps

3 cups water

1 chicken breast
-
Salt and pepper to season

¼ purple cabbage, shredded

¼ avocado, sliced
-
½ cup alfalfa
-
½ yellow capsicum, sliced

1 carrot, julienne
-
¼ cup cherry tomatoes, halved

Instructions

Step 1
Fill saucepan with 3 cups of water, enough to cover 1 chicken breast.

Place chicken breast in pot of water and season with salt and pepper.

Bring water to the boil, uncovered.

Step 4
Cover saucepan and lower heat to a simmer for 10 minutes until chicken is cooked through. Time will vary depending on size of chicken. Internal temperature of chicken should be 165˚C.

Remove from pan and let rest for 10 minutes and slice.

Heat Mission Original Super Soft Mini Wraps in the microwave according to packet instructions.

Step 7
Place one wrap on a flat surface.

Step 8
Assemble ingredients in an arch shape starting at the bottom, cabbage, avocado, alfalfa, chicken, capsicum, carrots and cherry tomatoes.

Roll wrap and cut in half to serve.

Repeat above steps with remaining mini wraps.
