Ingredients

2 Mission Salt Reduced Original Super Soft Wraps, heated on a grill plate just before serving

Prawn Marinade:
12 large green prawns, peeled & deveined

Juice & zest of 1 lime
-
1 birds eye red chilli, finely chopped

1 tbsp extra virgin olive oil

Zesty Lime Dressing:
¼ cup whole egg mayonnaise

Juice & zest of ½ lime
-
2 tsp mint, finely chopped
-
1 Lebanese cucumber, sliced in ribbons

1 carrot, shredded
-
1 small avocado, cut into wedges
-
½ cup bean sprouts
-
1 spring onion, finely sliced
-
a few coriander leaves
-
2 lime wedges, optional

Step 1
Combine marinade ingredients and allow prawns to marinate for 10 minutes. Season with freshly ground black pepper and salt. Cook prawns on a preheated medium-hot BBQ grill for approximately 1-2 minutes each side. Remove from grill, cover with foil and set aside.

Step 2
To assemble; place the Mission Salt Reduced Original Super Soft Wraps on a serving plate and assemble salad ingredients on top. Finish with the prawns, a dollop of zesty lime dressing and a scatter of spring onions and coriander leaves. Serve with lime wedges if desired.
