8 - 12 Mission Extra Soft Original Tortillas

400 - 500g fresh peeled/deveined raw prawns

Oil for cooking

2 cloves garlic

¼ tsp chilli powder

1 tbsp light soy sauce
-
½ tbsp sriracha
-
1 red onion
-
1 fresh pineapple

1 grilled corn cob

Dressing
1 teaspoon Jalapeño Tabasco (can use more for more spice)
½ cup plain Greek yoghurt
Juice of 2 limes
2 tsp honey

Avocado and coriander to serve

Step 1
Combine prawns, minced, or chopped garlic, chilli powder, soy sauce and sriracha. Mix well and set aside.

Make dressing. Combine tabasco, yoghurt, lime juice and honey.

Peel and chop pineapple into large, 1cm thick slices.

Heat BBQ, grill sliced onion, pineapple pieces and corn until cooked. Remove from heat and carefully slice corn kernels off the cob.

Grill prawns until pink and cooked through.

Step 6
Warm tortillas on the grill or in the microwave.

Place each tortilla on a plate, place sliced avocado, approximately 5 – 6 prawns, onion, corn, and pineapple down the centre. Season with dressing, extra avocado, and coriander.
