  • 8 Mission Original Super Soft Mini Wraps

     

  • Roasted tomato sauce:

    1.5kg tomatoes, quartered

  • 6 garlic cloves, unpeeled

  • ½ red onion, peeled and roughly chopped

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar glaze

    Pinch sea salt

    Pinch cracked pepper

     

    Filling:

  • 2 zucchinis, very finely sliced with a vegetable peeler

  • 200g glazed ham, finely sliced

  • 400g mozzarella, grated

  • Mini cherry tomatoes, garnish

  • Fresh parsley, garnish

  • Step 1

    Preheat oven to 170°C.

  • Step 2

    Place the tomatoes, garlic, and red onion on a lined baking tray. Drizzle with olive oil and balsamic glaze. Sprinkle with salt and pepper. Toss to coat, then arrange vegetables evenly on the tray.

  • Step 3

    Roast for 40 minutes until well cooked. Let cool slightly.

  • Step 4

    Remove the garlic cloves from the baking tray. Scrape all the tomatoes and red onions with their juices into a blender. Squeeze garlic cloves from the skin into the blender. Blend until smooth and set tomato sauce aside.

  • Step 5

    To assemble scrolls, take one wrap and place it onto a flat board. Spread 1-2 tbsp of tomato sauce evenly over the wrap. Layer zucchini slices over the sauce to cover the wrap (about 5 slices). Top with an even layer of ham and grated mozzarella.

  • Step 6

    Roll tightly to enclose the filling. Slice into even sections, about 2 cm pieces. Discard the ends.

  • Step 7

    Repeat steps 5 & 6 until you have 25 scrolls.

  • Step 8

    On a lined baking tray, carefully place the scrolls tightly together in the shape of a Christmas tree.

  • Step 9

    Bake for 20 minutes until cheese is melted. Let cool slightly.

  • Step 10

    Decorate with mini cherry tomatoes and fresh parsley. Cut a cherry tomato in half and place one half at the top of the tree as the star.
