10-12 Mission Extra Soft Original Tortillas

500g Faux beef mince

1 onion

1 can black beans

½ cup of corn, canned or frozen

1 packet of Mission Taco seasoning

Pico de Gallo:

4 tomatoes
-
1 small white onion
-
1 bunch coriander (set aside ¼ cup for serving)

1 Jalapeño
-
2 limes
-
½ tsp salt

2 cups cooked brown rice

1 ½ cups cheddar cheese

Step 1
Make Pico de Gallo, in a large bowl add seeded and finely chop tomatoes and jalapeño, chop coriander (set aside ¼ cup for serving) juice of 2 limes and salt. Mix well and set aside.

Finely chop onion, sauté in frying pan until soft. Add faux mince and cook until lightly brown and crumbly. Add Taco seasoning, beans, and corn. Continue cooking and mix well (1 to 2 minutes).

Warm tortillas in a pan or microwave.

Step 4
Place cooked faux mince, cooked rice, grated cheese, Pico de Gallo, and extra coriander on tortilla. Fold in sides and wrap burrito tucking the tortilla into itself. Serve whole or cut in half.
