Chicken Kebabs with Tzatziki Mini Wraps

Ingredients

8 Mission Original Super Soft Mini Wraps, heated on a grill plate just before serving

Kebabs:

1¼ cups fresh breadcrumbs

3 tbsp milk
-
500g chicken mince
-
½ carrot, finely grated
-
½ zucchini, finely grated
-
1 tbsp ground oregano
-
2 tbsp finely chopped mint
-
1 tbsp extra virgin olive oil

250g tub tzatziki dip
-
1 cucumber, finely chopped
-
1 carrot, shredded
-
4 slices canned beetroot, julienned

100g feta, crumbled
-
4 lemon wedges, optional

Step 1
Prepare the kebabs; combine breadcrumbs and milk in a large bowl. Add remaining ingredients and mix well. Season to taste with freshly ground black pepper and salt. Divide mixture into 16 portions. Thread 1 portion onto a small wooden square skewer and form into an egg shaped ball. Repeat with the remaining skewers. Set aside.

Step 2
Heat oil in a large non-stick frying pan over medium heat. Cook the skewers in batches for 3-4 minutes each side or until golden brown and cooked through.

Step 3
To assemble; place a Mission Original Super Soft Mini Wrap on each plate and add a spoonful of tzatziki. Top each with a little carrot, cucumber and beetroot and finish with two chicken kebabs and a sprinkle of feta. Serve immediately with lemon wedges if desired.
