8 Mission Extra Soft Original Tortillas

2 cups cooked chicken, shredded

2 tsps chili powder

1 tsp ground cumin

2 tsps olive oil

1 cup red capsicum, diced

1 cup green capsicum, diced

⅔ cup red onion, diced

2 garlic cloves, minced

1 tbsp fresh lime juice

3 tbsp butter, melted

1 ½ cups cheddar cheese, shredded

1 ½ cups mozzarella cheese, shredded

To serve: Guacamole, pico de gallo and cheese

Step 1
Heat oil in pan over medium heat. Add capsicum, garlic and red onion, sauté until tender, about 6 minutes. Transfer to a bowl with chicken, add lime juice and toss.

In a medium bowl, toss cheeses together.

Wipe the pan clean with paper towels, heat over medium heat.

Brush top side of tortillas with melted butter and transfer 1 tortilla buttered side down to pan. Sprinkle cheese evenly over the tortilla, layer with chicken mixture. Add another tortilla on top.

Cook until golden brown, about 2 minutes. Carefully flip and continue to cook the side until golden brown and cheese is melted.

Repeat the process with remaining tortillas, cheese and filling. Cut each quesadilla into 2 or 3 wedges. Serve warm with desired toppings.
