1 pack Mission Extra Soft Original Tortillas

2 tbsp extra virgin olive oil

500g chicken mince

1 yellow onion, chopped

1 tsp dried oregano

1 tsp ground cumin

1 tsp salt

2 cups enchilada sauce

2 cups cheese, shredded

1 avocado, sliced

½ cup sour cream
-
1 jalapeño, sliced
-
1 cup pineapple, diced

1 cup coriander, roughly chopped

1 lime, to serve

Step 1
Preheat oven to 200°C.

Step 2
In an oven proof frying pan over medium-high heat, add onion and chicken. Cook and crumble chicken until cooked through. Stir in the spices and heat until fragrant. Add half of the enchilada sauce.

Step 3
Layer with Mission Extra Soft Original Tortillas. Pour over the rest of the enchilada sauce and top with cheese. Cook in oven for 10 minutes or until cheese is melted.

Serve with avocado, sour cream, coriander, pineapple, jalapeño and lime.
