Ingredients

4 Mission Roasted Garlic Super Soft Wraps

2 tbsp olive oil

1 large eggplant, sliced into 2cm thick slices

8 tbsp tomato passata or tomato pasta sauce with chilli

12 cherry tomatoes, cut in half

1 cup grated cheddar cheese

2 tbsp grated parmesan cheese

Fresh basil leaves, to taste

Step 1
Heat oil on a grill plate or in a non-stick frying pan until hot. Add the eggplant and season generously with salt flakes and freshly ground black pepper. Cook each slice for 3-4 minutes or until deep golden brown. Remove from heat and cut each slice into large 3cm cubes. Set aside.

Step 2
Place the heated Mission Roasted Garlic Super Soft Wraps on a serving plate and spread the tomato sauce evenly over the wraps. Top each with grated cheese, cherry tomatoes, diced eggplant, parmesan cheese and a few basil leaves. Roll each wrap to enclose the filling. Serve immediately.
