Ingredients

1 packet Mission Yellow Corn Tortillas

Mexican spiced cauliflower
½ cauliflower head
3 tbs olive oil
½ tsp chilli flakes
1 tsp garlic powder
1 tsp cumin
¼ tsp paprika
½ tsp salt
½ tsp ground white pepper

Dressing
1 avocado
1 tbsp coriander
Juice 1 lime
½ tsp salt
½ red onion diced, garnish

Step 1
Preheat oven to 200°C and line a baking tray with baking paper.

Break apart cauliflower into pieces using your hands to make florets and place into a large mixing bowl. Drizzle over the oil and toss to coat.

Combine dry spices in a small bowl and sprinkle over cauliflower. Give a good mix or toss to coat cauliflower with spices and then bake for 25 minutes.

To make the dressing, add all ingredients to a food processor and blitz until smooth. Then set aside in the fridge until ready to serve.

Heat tortillas in a pan according to packet instructions and assemble with a couple of tablespoons of Mexican spiced cauliflower, dressing and garnish with red onion. Serve with lime wedges.
