Butter Chicken with Roti

Ingredients

3 Mission Plain Roti, heated for 1 minute in microwave

1 kg chicken thigh, trimmed & diced

5 tbsp good quality Butter Chicken Paste

2 tbsp ghee or olive oil

1½ cups tomato puree

1 tbsp sugar

¾ cup cream

Step 1
Place chicken thigh pieces in a bowl and add Butter Chicken Paste. Mix well to coat chicken then cover and leave to marinate in the refrigerator for 1 hour or overnight if possible.

Step 2
Heat ghee or olive oil in a pan. Cook chicken until brown then add tomato puree and sugar. Allow to simmer for 20 minutes, or until chicken is tender. Add most of the cream (reserving approximately 1 tablespoon) and stir through.

Step 3
To serve; place butter chicken in a serving dish and drizzle reserved cream in a fine line around the sauce. Garnish with micro herbs or fresh coriander leaves. Serve with hot Mission Plain Roti.
