Ingredients

6 Mission Original Super Soft Wraps

1kg raw prawns, shell & entrails removed

½ cup Peri Peri hot marinade

Salad:
-
500g watermelon, rind removed and cut into wedges
-
375g organic spinach or rocket leaves
-
Seeds from ½ pomegranate
-
½ red onion, cut into fine slivers
-
100g pistachio nuts, roughly chopped
-
½ bunch mint leaves
-
Aioli dressing
-
Lemon wedges

Step 1
Marinate prawns for 2 hours or overnight in Peri Peri marinade.

Step 2
Prepare salad; toss all ingredients together then transfer salad to a serving platter.

Step 3
Cook prawns on a medium-hot BBQ grill for approximately 1 minute each side. Remove from BBQ and arrange prawns in a serving bowl.

To serve; arrange Mission Original Super Soft Wraps on a plate and allow each guest to assemble their own wrap by spooning a little salad and prawns along the centre of a Mission wrap, then drizzle with a teaspoonful of aioli and a squeeze of lemon. Serve immediately.
