2 tbsp olive oil

1 red onion, finely diced

2 cloves garlic, finely chopped

1 tsp ground chilli powder

1 tsp ground cumin

1 tsp ground coriander

420g can chopped tomatoes

425g can whole black beans, drained & rinsed

½ tsp salt
-
Freshly ground black pepper

1 cup grated Monterey Jack, tasty, Parmesan or Manchego cheeses

Toppings to Serve:

Small avocados, sliced

Sour cream
-
Chilli jam
-
Small red chillis, finely sliced

Spring onions, finely sliced

Fresh coriander leaves

Step 1
Heat oil in a non-stick fry pan and sauté onion and garlic for 3 minutes until soft. Add spices and cook for a further minute. Add tomatoes and black beans and cook for a further 5 minutes.

Remove from heat and season to taste with freshly ground black pepper and salt to taste. Allow to cool for 15 minutes before using.

Place Mission Street Tacos on a baking paper lined oven tray and top each tortilla with black beans and a generous sprinkle of grated cheese. Bake in a preheated oven of 180°C for 8-10 minutes until the tortilla base is crisp and the cheese is melted. Remove from oven and top with desired toppings. Serve immediately.
