  • 2 Mission Souvlaki Bread

     

  • Garlic Yoghurt:

  • 1 cup Greek yoghurt

  • 2 garlic cloves, grated

  • 1 pinch of salt and pepper

     

  • 4 eggs

    Chilli oil

    2 tbsp butter

    1 tbsp chilli oil

    1 tbsp chopped chives, extra for garnish

    1 pinch of chilli flakes

  • Step 1

    In a bowl, mix Greek yoghurt, minced garlic, salt, and pepper. Stir well and set aside.

  • Step 2

    Poach the eggs to your desired level (about 2-3 minutes).

  • Step 3

    In a frying pan, combine the butter, chilli oil, and chilli flakes. Heat over medium heat for about 3 minutes, stirring occasionally, until the mixture turns golden.

  • Step 4

    Add the chopped chives to the pan and stir to combine.

  • Step 5

    Spread the garlic yoghurt mixture onto a serving plate. Drizzle some of the chilli oil from the pan over the yoghurt. Top with the poached eggs, and drizzle with more chilli oil. Garnish with fresh chives and additional chilli flakes.

  • Step 6

    Warm Mission Souvlaki Bread on an oiled griddle pan. Serve alongside the yoghurt and egg dish.
