6 large eggs

1 cup cream

½ cup milk

2 tsp vanilla extract

½ tsp ground cinnamon

Pinch salt

50g unsalted butter

Dash oil, for frying

Berry Filling:

60g unsalted butter
-
¾ cup maple syrup

1 punnet raspberries

1 punnet strawberries, hulled & cut in ½ or ¼ depending upon size

1 punnet blueberries

To Serve:

4 tbsp pure cream

Extra maple syrup

Step 1
Whisk eggs, cream, milk, vanilla, cinnamon and salt together in a bowl. Add MISSION Soft & Fluffy Wraps to the egg mixture ensuring all wraps are submerged under the liquid.

Step 2
Meanwhile, prepare berry filling; melt 60g butter in a non-stick frying pan and add maple syrup and berries. Cook tossing in the pan for 3 minutes then remove from heat and transfer berries to a bowl. Set aside until ready to use.

Step 3
Over medium-high melt 50g butter with a dash of oil in a non-stick frying pan. Remove a soaked MISSION Soft & Fluffy Wrap from the egg and cream mixture and place in the sizzling buttered pan. Cook for 2-3 minutes each side to a dark golden brown then remove from pan and place on a baking paper lined oven tray. Place in a warm 150°C oven to keep warm whilst cooking the remaining wraps. As the French toast is cooked stack them on top of each other to keep warm whilst cooking the remainder.

Step 4
To serve; place a French toast on each plate. Top with a spoonful of berries and syrup. Place a second toast on top and repeat with the berries and a third piece of toast finishing with berries on top. Add a dollop of cream to each and a drizzle of extra maple syrup if desired. Serve immediately.
