  • 1 Mission Extra Soft Original Tortilla

     

  • 3 Eggs

    2 spring onions, chopped

    50g bacon, diced

    ½ cup (45g) grated cheddar cheese

    50g thickened cream

    3 cherry tomatoes, halved

    1 teaspoon zaatar

    Sriracha or Tabasco sauce to serve

  • Step 1

    Preheat the air fryer to 165°C

  • Step 2

    Place diced bacon into an air fryer basket and cook for 5 minutes. Remove from the air fryer and set aside.

  • Step 3

    In a medium sized bowl whisk together eggs and cream until smooth. Stir in the grated cheese and chopped spring onion and cooked diced bacon. Season with a little salt and cracked pepper.

  • Step 4

    Spray a small cake tin with oil. Press a Mission Extra Soft Original Tortilla into the cake tin so it lines the tin and comes halfway up the sides. Carefully pour the egg mixture into the tortilla lined tin and top with the halved cherry tomatoes and zaatar.

  • Step 5

    Cook in the air fryer for 16 - 20 minutes, or until the quiche has puffed and is firm in the centre. Allow to sit for a few minutes before removing from the tin and serving.

  • Step 6

    After taking it out of the tin, cut the quiche into wedges and serve with a dollop of Sriracha or Tabasco sauce. For convenient meal prepping, put single slices into freezer bags or use foil to wrap each individual piece tightly before freezing.
