Vegetarian Chickpea & Salad Low Carb Wraps

2 Mission Low Carb Wraps

Dressing:

½ cup low-fat plain yoghurt
-
2 tsp lemon juice
-
freshly ground black pepper and salt flakes, to taste

½ cup chickpeas, drained rinsed

1 medium carrot, shredded
-
½ small beetroot, shredded
-
¼ small red onion, slivered
-
2 tsp flat leaf parsley, chopped

2 small handfuls baby spinach leaves

50g low fat feta
Instructions

Step 1
Mix yoghurt and lemon juice together and season to taste. Set aside.

Step 2
Combine the chickpeas, carrot, beetroot, red onion and parsley in a bowl. Arrange spinach leaves along the centre of 2 Mission Low Carb Wraps. Top with carrot and beetroot mixture and drizzle with yoghurt dressing. Finish with crumbled feta then roll wrap and serve immediately.
